A flavorful and hearty turkey ragù that's quick to prepare and perfect for a comforting meal.

Ingredients

olive oil

  • 2 tablespoons olive oil (divided)
  • 1 pound ground turkey
  • 1 yellow onion yellow onion (peeled and small-diced)
  • 1 green bell pepper green bell pepper (trimmed, seeded, and small-diced)
  • ¼ cup sun-dried tomatoes in oil (chopped)
  • 2 tablespoons butter
  • 1 tablespoon Italian seasoning (divided; plus more to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Crushed red pepper
  • ¼ cup water
  • 14.5 ounce fire-roasted crushed tomatoes
  • ½ cup finely grated Parmesan cheese (divided)
  • 16 ounces mezzi rigatoni or tubular pasta

  • Fresh basil leaves (for serving)

Instructions 

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced onion and bell pepper; cook until softened.
  • Add ground turkey, sun-dried tomatoes, Italian seasoning, garlic powder, paprika, salt, and pepper; cook until turkey is browned.
  • Stir in crushed tomatoes, water, and half of the Parmesan cheese; simmer for 10 minutes.
  • Meanwhile, cook pasta according to package instructions; drain.
  • Combine pasta with sauce, top with remaining Parmesan and fresh basil; serve hot.

Notes

Use fresh basil for the best flavor and adjust red pepper to your spice preference.
