Instructions
Beat the eggs.
Scramble eggs in 1 tbsp oil, then remove.
Sauté onions in remaining oil for 2 minutes.
Add vegetables and white scallion parts; cook until crisp-tender.
Add rice, stir to break clumps, then add soy sauce, spices, and sesame oil; mix well.
Return scrambled eggs, mix everything, garnish with scallion greens, and serve hot.
Notes
Use day-old rice for best texture and flavor.
