A quick and nutritious fried rice recipe packed with protein and vibrant vegetables, perfect for a satisfying meal.

Ingredients

Eggs

  • 4 large large eggs
  • 3 tablespoons peanut, vegetable, or olive oil (divided)
  • 1 cup diced onion
  • 1.5 cups diced mixed vegetables (bell pepper, carrots, zucchini, etc.)
  • 0.5 cup sliced scallions, white parts
  • Pinch salt
  • 4 cups cooked overnight jasmine rice
  • 2.5 tablespoons soy sauce (use tamari if gluten-free)
  • 0.5 teaspoon five-spice powder
  • Dash ground white pepper (optional)
  • 1-2 teaspoons toasted sesame oil

Instructions 

  • Beat the eggs.
  • Scramble eggs in 1 tbsp oil, then remove.
  • Sauté onions in remaining oil for 2 minutes.
  • Add vegetables and white scallion parts; cook until crisp-tender.
  • Add rice, stir to break clumps, then add soy sauce, spices, and sesame oil; mix well.
  • Return scrambled eggs, mix everything, garnish with scallion greens, and serve hot.

Notes

Use day-old rice for best texture and flavor.
