A delicious, high-protein granola that's easy to make and perfect for a healthy breakfast or snack.
Ingredients
Oats and Nuts

cup
oil (high oleic sunflower, olive oil, avocado oil, coconut oil)
1/3
cup
maple syrup (or honey)

tablespoon
vanilla

cups
whole rolled oats
1
cup
sliced almonds (or chopped)

cup
chopped walnuts (or pecans)

cup
plain protein powder
((animal or plant-based))
1/2
cup
sunflower seeds (roasted or raw)
1/4
cup
flax seeds (ground or whole)
1/4
cup
hemp seeds
1-2
tablespoons
cinnamon
(to taste (I use 2 tablespoons))

teaspoon
salt
(optional if nuts and seeds are unsalted)
Instructions
Preheat oven to 325°F (160°C) and line a baking sheet with parchment or silicone.
Mix oil, syrup, and vanilla in a large bowl.
Add remaining ingredients and stir until oats are coated.
Spread mixture evenly on the baking sheet and bake for 24-26 minutes, rotating halfway.
Cool on a rack for 1 hour, then break into chunks and store.
Notes
Store in an airtight container for up to a month at room temperature.
