A hearty and nutritious chicken noodle soup packed with protein and wholesome ingredients, perfect for a comforting meal.

Ingredients

Protein

  • 2 cups cooked shredded chicken breast
  • 6 cups low-sodium chicken broth
  • 1 cup whole wheat egg noodles
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 medium carrots (sliced)
  • 2 stalks celery (sliced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion, minced garlic, carrots, and celery; sauté until tender (~5 min).
  • Add shredded chicken and stir to combine.
  • Pour in chicken broth, bring to a boil, then add noodles, thyme, and oregano.
  • Reduce heat and simmer for 10 minutes; season with salt and pepper.
  • Serve hot, garnished with parsley if desired.

Notes

Use leftover cooked chicken for convenience.
