Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion, minced garlic, carrots, and celery; sauté until tender (~5 min).
Add shredded chicken and stir to combine.

Reduce heat and simmer for 10 minutes; season with salt and pepper.
