Ingredients

Wet ingredients

  • 1/2 cup olive oil
  • 1/2 cup agave syrup
  • 3/4 cup Greek yogurt
  • 2 large eggs
  • zest of one lemon lemon zest
  • 2 tablespoons lemon juice

Dry ingredients

  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Glaze ingredients

  • 1/2 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1-2 tablespoons lemon juice

Instructions 

  • Preheat oven to 350°F (175°C). Line muffin tin with paper liners.
  • Mix olive oil, agave syrup, Greek yogurt, eggs, lemon zest, and lemon juice until combined.
  • Add flour, baking powder, baking soda, and salt; mix until just combined.
  • Fill muffin cups 3/4 full and bake for 15-17 minutes. Cool slightly before removing.
  • Mix glaze ingredients and drizzle over cooled muffins.

Notes

Store muffins in an airtight container at room temperature for 2-3 days.
