Ingredients

Vegetables

  • 4 medium zucchinis (Halved lengthwise and scooped out to create "boats")
  • 1 pound ground beef (Lean ground beef works best)
  • 1 small onion (Diced)
  • 2 cloves garlic (Minced)
  • 1 cup tomato sauce (Flavorful base for filling)
  • 1 cup shredded cheese (Mozzarella, cheddar, or parmesan)
  • 1 tablespoon olive oil (For sautéing)
  • 1 teaspoon Italian seasoning (Herb blend)
  • 0.5 teaspoon paprika (Adds smokiness)
  • to taste salt & pepper (Seasoning to preference)

Instructions 

  • Sauté diced onion and minced garlic in olive oil until fragrant.
  • Add ground beef and cook until browned; season with Italian seasoning, paprika, salt, and pepper.
  • Mix in tomato sauce and cook for a few minutes.
  • Stuff the zucchini boats with the beef mixture and top with shredded cheese.
  • Bake at 375°F (190°C) for 15-20 minutes until cheese is melted and bubbly.

Notes

For a lower-fat version, use lean beef and reduce cheese amount.
