This flavorful chicken and vegetable bake is a quick, healthy, and satisfying meal perfect for any day.

Ingredients

Protein

  • 4 pieces Boneless, skinless chicken breasts (choose fresh or thawed)

Vegetables

  • 1 cup Bell peppers (red, yellow, green) (diced)
  • 1 cup Zucchini (diced)
  • 1 cup Cherry tomatoes (halved)
  • 1 medium Red onion (diced)

Seasonings & Oils

  • 2 tablespoons Olive oil (extra virgin)
  • 3 cloves Garlic cloves (minced)
  • 2 teaspoons Dried Italian herbs
  • 1 teaspoon Salt (to taste)
  • 1 teaspoon Freshly ground black pepper (to taste)

Cheese & Garnish

  • ½ cup Parmesan cheese (for topping)
  • ¼ cup Fresh parsley or basil (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Season chicken with herbs, salt, pepper, and half of the garlic. Drizzle with 1 tablespoon olive oil.
  • Arrange chicken and vegetables in a baking dish. Drizzle with remaining olive oil and garlic.
  • Bake for 25-30 minutes until chicken is cooked through. Sprinkle Parmesan cheese on top and bake for an additional 5 minutes.
  • Garnish with fresh parsley or basil before serving.

Notes

For extra flavor, marinate the chicken with herbs and garlic for 30 minutes before baking.
