Instructions
Whisk together cornstarch, chicken broth, soy sauce, and honey; set aside.
Cook chicken in 1 tbsp olive oil until browned, then remove.
Sauté vegetables in remaining oil until tender but crispy, then add ginger and garlic for 1-2 minutes.
Return chicken to skillet, add sauce, and cook until thickened, about 1 minute.
Top with sesame seeds and serve hot over rice if desired.
Notes
For extra flavor, add a splash of sesame oil or chopped green onions.
