A quick and flavorful chicken stir fry with fresh vegetables and a sweet-savory sauce, perfect for a weeknight dinner.

Instructions
Chop vegetables and chicken into strips.
Cook chicken in 1 tbsp olive oil until browned and cooked through. Remove from pan.
Add 2 tbsp olive oil, vegetables, garlic powder, ginger, salt, and pepper. Sauté 10 minutes until soft.
Lower heat, add soy sauce and honey, simmer a few minutes.
Return chicken to pan, mix, and simmer 5 minutes. Serve over rice.
Notes
Use fresh vegetables for best flavor. Adjust soy sauce for saltiness.
