Instructions
Preheat oven to 200°C (400°F). Roast cherry tomatoes with olive oil, salt, and pepper for 20-25 minutes.
Cook pasta in salted boiling water until al dente; reserve 1/2 cup pasta water, then drain.
Sauté garlic in olive oil, add cooked chicken, then pasta and pesto. Mix well, adding reserved pasta water to loosen.
Gently toss in roasted tomatoes, sprinkle with Parmesan and pine nuts, garnish with basil if desired, and serve.
Notes
For extra flavor, add a squeeze of lemon or a drizzle of balsamic vinegar before serving.
