A quick and flavorful pasta dish combining roasted cherry tomatoes, tender chicken, and fresh basil pesto for a satisfying meal.

Ingredients

Protein

  • 2 cups cooked chicken breast (cubed or sliced)

Pasta

  • 300 g pasta (rigatoni, penne, or farfalle)

Vegetables

  • 2 cups cherry tomatoes (halved)

Sauces & Condiments

  • 1/2 cup basil pesto

Oils & Fats

  • 3 tablespoons olive oil

Garlic

  • 2 cloves garlic (minced)

Cheese

  • 1/4 cup grated Parmesan cheese

Nuts & Seeds

  • 2 tablespoons pine nuts

Seasonings

  • to taste Salt
  • to taste Black pepper

Garnish

  • optional Fresh basil leaves (for garnish)

Instructions 

  • Preheat oven to 200°C (400°F). Roast cherry tomatoes with olive oil, salt, and pepper for 20-25 minutes.
  • Cook pasta in salted boiling water until al dente; reserve 1/2 cup pasta water, then drain.
  • Sauté garlic in olive oil, add cooked chicken, then pasta and pesto. Mix well, adding reserved pasta water to loosen.
  • Gently toss in roasted tomatoes, sprinkle with Parmesan and pine nuts, garnish with basil if desired, and serve.

Notes

For extra flavor, add a squeeze of lemon or a drizzle of balsamic vinegar before serving.
