These homemade energy bars combine the natural sweetness of dates with crunchy cashews and chocolate for a nutritious snack that keeps you energized throughout the day.

Ingredients

Dried Fruits

  • 12 pieces Medjool Dates (pitted)

Nuts & Seeds

  • 1 cup Raw Cashews (lightly toasted)
  • 2 tablespoons Chia Seeds
  • 1/4 cup Pumpkin Seeds

Grains & Add-ins

  • 1 cup Rolled Oats
  • 2 tablespoons Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1 pinch Sea Salt

Add-ins

  • 1/2 cup Dark Chocolate Chips
  • 1/2 cup Shredded Coconut

Instructions 

  • Pit the dates and blend them until sticky paste forms.
  • In a large bowl, combine the date paste with toasted cashews, oats, chia seeds, pumpkin seeds, vanilla, and sea salt.
  • Press the mixture firmly into a lined baking dish.
  • Sprinkle chocolate chips and shredded coconut on top and press lightly.
  • Refrigerate for at least 1 hour before cutting into bars.
