A quick and budget-friendly one-pan meal combining lean ground turkey, rice, and vegetables for a satisfying dinner.

Ingredients

Meat

  • 1 lb Lean ground turkey (Choose 93% lean)

Grains

  • 1 cup Long-grain white rice

Vegetables

  • 1 medium Onion (Chopped)
  • 2 cloves Garlic cloves (Minced)
  • 1 cup Bell peppers (Chopped)

Broth & Canned Goods

  • 2 cups Chicken broth (Low-sodium preferred)
  • 1 can Diced tomatoes

Oils & Spices

  • 1 tbsp Olive oil (For sautéing)
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika

Seasonings

  • to taste Salt
  • to taste Black pepper

Garnish

  • 2 tbsp Fresh parsley (Chopped for garnish)

Instructions 

  • Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic; sauté until fragrant.
  • Add ground turkey; cook until browned.
  • Stir in chopped bell peppers, cumin, paprika, salt, and pepper; cook for 2 minutes.
  • Add rice, diced tomatoes, and chicken broth; bring to a boil.
  • Reduce heat, cover, and simmer for 15 minutes until rice is cooked.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
