Delicious and easy-to-make beef enchiladas with a flavorful red sauce and melted cheese, perfect for a satisfying meal.

Ingredients

  • 1 tbsp olive oil
  • 1 unit onion (finely diced)
  • 1 lb lean ground beef
  • 1 unit jalapeño (minced)
  • 4-5 cloves garlic (minced)
  • 1.5 cups red enchilada sauce (divided)
  • to taste Kosher salt and pepper
  • 1/4 cup chopped fresh cilantro
  • 12 whole wheat flour or corn tortillas
  • 1 cup Monterey jack cheese (shredded plus extra 1/4 cup for topping)
  • optional sour cream for serving

Instructions 

  • Heat oil in a skillet and sauté onion until softened, about 2-3 minutes.
  • Add ground beef, cook until no longer pink, then stir in jalapeño, garlic, 1 cup of enchilada sauce, salt, pepper, and cilantro.
  • Fill tortillas with meat mixture, roll, place in baking dish, pour remaining sauce, and sprinkle with cheese.
  • Bake at 400ºF (200ºC) for 20-25 minutes until bubbly and cheese melts.
  • Garnish with sour cream, jalapeño slices, cilantro, and chili flakes before serving.

Notes

For a spicier kick, add more jalapeño or chili flakes.
