Instructions
Heat oil in a skillet and sauté onion until softened, about 2-3 minutes.
Add ground beef, cook until no longer pink, then stir in jalapeño, garlic, 1 cup of enchilada sauce, salt, pepper, and cilantro.
Fill tortillas with meat mixture, roll, place in baking dish, pour remaining sauce, and sprinkle with cheese.
Bake at 400ºF (200ºC) for 20-25 minutes until bubbly and cheese melts.
Garnish with sour cream, jalapeño slices, cilantro, and chili flakes before serving.
Notes
For a spicier kick, add more jalapeño or chili flakes.
