2tablespoonsCajun seasoning
1tablespoonolive oil
1mediumbell pepper, diced
1smallonion, finely chopped

1can (14.5 oz)diced tomatoes
1/2cupchicken broth
1teaspoonsmoked paprika
1/2teaspoonsalt
1/4teaspoonblack pepper

Instructions
Heat olive oil in a skillet over medium-high heat. Add ground turkey, season with half of the Cajun seasoning, salt, and pepper. Cook until browned and internal temperature reaches 165°F (74°C).
Push turkey to one side; add diced onion and bell pepper. Sauté for 2 minutes, then add minced garlic and cook for 30 seconds.
Stir in diced tomatoes, chicken broth, remaining Cajun seasoning, and smoked paprika. Simmer for 3-4 minutes until thickened.
Garnish with chopped parsley or cilantro. Serve immediately over rice or your preferred side.
