Delight in these moist, chocolatey muffins made with ripe bananas and sweetened naturally with agave syrup, perfect for a healthy treat.

Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups whole wheat flour
  • 0.5 cups cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.25 tsp salt

Wet Ingredients

  • 3 overripe bananas bananas (mashed)
  • 0.33 cups agave syrup
  • 1 egg egg (slightly beaten, room temperature)
  • 0.25 cups coconut oil (melted and slightly cooled)
  • 0.25 cups plain Greek yogurt (room temperature)
  • 0.75 cups semi-sweet chocolate chips

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 12-cup muffin pan or line with liners.
  • Mix dry ingredients in a large bowl. Mash bananas and whisk in agave syrup, egg, coconut oil, and yogurt.
  • Combine wet and dry ingredients, stirring until just moistened. Fold in chocolate chips.
  • Distribute batter evenly into muffin cups, about 3/4 full. Bake for 14-16 minutes until a toothpick comes out clean.
  • Cool muffins in pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, add a handful of chopped nuts or a sprinkle of sea salt on top before baking.
