A flavorful Cajun-inspired one-pot dish combining seasoned beef, vegetables, and rice topped with cheese and spring onions.

Instructions
Heat oil in a large pan, add beef, and cook until browned (5 mins).
Add onion, garlic, celery, peppers, and Cajun spice; cook until vegetables soften (5 mins).
Rinse rice well, then add to pan with stock, tomato purée, salt, and pepper. Stir and cook covered for 15-20 mins until rice is tender.
Fluff rice with a fork, sprinkle cheese on top, and broil for 3-5 mins until melted and bubbly.
Garnish with spring onions if using. Serve hot.
Notes
Ensure rice is rinsed thoroughly to prevent clumping.
