Instructions
Cook wild rice according to package instructions, using broth and water for flavor. Set aside.
In a large skillet, brown chicken thighs in 1 tablespoon of oil until cooked through, then remove and set aside.
In the same skillet, sauté carrots, shallots, and apples until softened, about 5-6 minutes.
Add broth, thyme, and rosemary; simmer until reduced, then whisk in Dijon mustard and heavy cream if using. Return chicken to pan and simmer briefly.
Stir in cooked wild rice, garnish with extra rosemary, and serve warm.
