Ingredients

Pasta

  • 12 oz penne pasta

Meat

  • 1 lb lean ground turkey

Broth

  • 1 cup low sodium chicken broth

Sauce

  • 15 oz can tomato sauce

Dairy

  • 1/2 cup half-and-half

Cheese

  • 1 cup shredded cheddar and mozzarella cheese blend

Vegetables

  • 1 cup mixed vegetables, chopped

Instructions 

  • Chop vegetables. Brown ground turkey in a skillet, then set aside.
  • Sauté vegetables in the same skillet until softened.
  • Add chicken broth and tomato sauce, then return turkey and simmer for 15-20 minutes.
  • Cook pasta in salted boiling water until al dente, then drain, reserving some pasta water.
  • Combine pasta with sauce, stir in half-and-half and cheese, then serve.
