Instructions
Heat olive oil in a large pot over medium heat. Add garlic and onion; sauté until fragrant.
Add celery, carrots, sweet potato, and zucchini; cook for 5-7 minutes.
Pour in chicken broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 20 minutes.
Puree the soup until smooth using an immersion blender or regular blender.
Stir in heavy cream, season with salt, pepper, and herbes de provence. Serve hot.
Notes
For a vegan version, substitute chicken broth with vegetable broth and use coconut cream instead of heavy cream.
