Ingredients

Vegetables

  • 3 tbsp extra-virgin olive oil
  • 1 clove garlic, finely minced
  • 1 medium red onion, chopped
  • 1 stalk celery, chopped
  • 2 small carrots, coarsely diced
  • 0.5 sweet potato cut into large cubes
  • 1 large zucchini, cut into large pieces
  • 0.25 tsp herbes de provence
  • to taste Salt Salt
  • to taste Black pepper Black pepper
  • 3 cups chicken broth
  • 0.5 cup heavy cream (35%)

Instructions 

  • Heat olive oil in a large pot over medium heat. Add garlic and onion; sauté until fragrant.
  • Add celery, carrots, sweet potato, and zucchini; cook for 5-7 minutes.
  • Pour in chicken broth and bring to a boil. Reduce heat and simmer until vegetables are tender, about 20 minutes.
  • Puree the soup until smooth using an immersion blender or regular blender.
  • Stir in heavy cream, season with salt, pepper, and herbes de provence. Serve hot.

Notes

For a vegan version, substitute chicken broth with vegetable broth and use coconut cream instead of heavy cream.
