A hearty and flavorful casserole combining cabbage, ground beef, rice, and tomatoes, cooked slowly to perfection for an easy family meal.

Ingredients

Vegetables and Meat

  • 1 large green cabbage (chopped into bite-sized pieces)
  • 1 lb ground beef (85/15 recommended)
  • 3/4 cup uncooked long grain white rice (goes in raw)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced or 1 heaping teaspoon garlic paste)
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • to taste kosher salt (season more than you think you need)
  • to taste black pepper
  • 1 tsp brown sugar (optional)
  • 1.5 cups shredded cheddar or Monterey Jack cheese (added in the last 30 minutes)

Instructions 

  • Cook ground beef until no pink, then set aside.
  • Sauté onion and garlic until softened.
  • Mix beef, onion, garlic, tomatoes, sauce, seasonings, and rice.
  • Layer cabbage and meat mixture in slow cooker, top with rice.
  • Cook on low 6–8 hours; add cheese 30 mins before serving, then melt.

Notes

Ensure rice is in contact with the liquid for even cooking.
