Ingredients

Cauliflower

  • 1 medium head cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour ((60g))
  • 1/4 cup cornstarch ((30g))
  • 1/2 cup water ((120ml))
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp paprika
  • to taste Salt and pepper
  • 1/2 cup buffalo sauce ((120ml), e.g., Frank’s RedHot)
  • 2 tbsp olive oil or melted butter

For the ranch dip

  • 1/2 cup mayonnaise ((120g))
  • 1/4 cup sour cream ((60g))
  • 2 tbsp buttermilk ((30ml), optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried dill
  • 1 tbsp fresh chives or parsley, finely chopped
  • 1 tsp lemon juice

Salt and pepper

Instructions 

  • Preheat oven to 450°F (230°C) and line a baking sheet.
  • Mix flour, cornstarch, spices, salt, and pepper. Whisk in water until smooth.
  • Dip cauliflower in batter, place on baking sheet, and bake for 20 minutes, flipping halfway.
  • Combine buffalo sauce with oil or butter. Toss baked cauliflower in sauce.
  • Return to oven for 10-12 minutes. Meanwhile, whisk ingredients for ranch dip and chill.

Notes

For extra crispiness, broil for the last 2 minutes.
