Instructions
Sauté chopped onion, garlic, and celery in olive oil until fragrant.
Add cauliflower, zucchini, carrots, bell pepper, broccoli, herbs, and water; bring to a boil.
Reduce heat and simmer until vegetables are tender, about 15 minutes.
Remove bay leaf and thyme sprigs; blend soup until smooth.
Stir in coconut milk, season with salt, pepper, and oregano; garnish with parsley before serving.
Notes
You can add more herbs or adjust seasoning to taste.
