Ingredients

  • 4 pieces salmon fillets (6-ounce each)

Seasonings

  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning

Cooking

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (chopped, oil-packed, drained)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup freshly grated parmesan cheese
  • 2 cups fresh spinach
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh basil (chopped, optional)

Instructions 

  • Season salmon fillets with salt, pepper, and Italian seasoning.
  • Heat olive oil and butter in a skillet over medium heat; cook salmon until golden and cooked through, about 4-5 minutes per side.
  • Add garlic and sun-dried tomatoes; cook for 1 minute.
  • Pour in chicken broth and heavy cream; simmer until slightly thickened, about 5 minutes.
  • Stir in parmesan cheese and spinach; cook until spinach wilts, about 2 minutes.

Notes

For extra flavor, add chopped fresh basil before serving.
