Ingredients

Canned Tomatoes

  • 1 can canned tomatoes (crushed, whole, or diced) (Whole tomatoes give the best texture if you like to break them up by hand.)

Vegetables

  • 1 medium onion (Diced (Yellow or sweet onions work well.))

Garlic

  • 2-4 cloves garlic (Minced (Adjust to taste.))

Broth

  • 2 cups chicken or vegetable broth (Use low-sodium broth if preferred.)

Cream or Coconut Milk

  • 1/2 cup heavy cream or coconut milk (Coconut milk adds a subtle coconut note.)

Oil

  • 2 tablespoons olive oil (For sautéing.)

Seasonings

  • to taste salt and black pepper (Freshly ground.)

Herbs

  • optional fresh or dried basil, thyme, or parsley (For finishing.)

Instructions 

  • Heat olive oil in a large pot over medium heat and sauté diced onion until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Pour in the canned tomatoes and broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  • Use an immersion blender to puree the soup until smooth, then stir in the heavy cream or coconut milk.
  • Season with salt and pepper, garnish with herbs if desired, and serve hot.

Notes

This soup pairs well with crusty bread or a grilled cheese sandwich for a complete meal.
