A delicious and creamy chicken dish with spinach, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 4 pieces chicken cutlets (thinly sliced)
  • 1.25 tsp salt (to taste)
  • 1.25 tsp black pepper (to taste)
  • 2 tbsp vegetable oil
  • 4 tbsp all purpose flour
  • 2 tbsp butter
  • 4 cloves garlic (smashed)
  • 1 cup half and half
  • 0.25 cup chicken broth
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 2 cups spinach

Instructions 

  • Season chicken with salt and pepper, then coat with 2 tbsp flour.
  • Heat oil in a skillet over medium-high heat, sear chicken until browned, then remove.
  • Lower heat, add butter and garlic; cook until fragrant. Add flour, half and half, and broth; stir to thicken.
  • Stir in spinach, then return chicken to skillet, coating with sauce. Serve once chicken is heated through.

Notes

Ensure not to overcook the chicken to keep it tender.
