Ingredients

Vegetables

  • 2 cups fresh spinach
  • 1 clove garlic (minced)
  • 4 large eggs
  • 1/4 cup heavy cream
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • pinch nutmeg

Instructions 

  • Cook spinach until wilted, then set aside.
  • Sauté garlic in butter, add cream, salt, and pepper; simmer briefly.
  • Pour cream mixture over spinach, create space for eggs.
  • Crack eggs over spinach, cover, and cook until whites are set.
  • Sprinkle Parmesan and nutmeg, then serve hot.
