Creamy Southwestern Chipotle Beef Pasta

A flavorful and creamy pasta dish with smoky chipotle, tender beef, and roasted poblano peppers, perfect for a quick weeknight dinner.

Ingredients

Pasta

  • 1 pound cavatappi or other short pasta

Vegetables

  • 2 poblano peppers poblano peppers, thinly sliced
  • 2 shallots shallots, thinly sliced

Meat

  • 1 pound ground beef

Seasonings and Condiments

  • 1 packet taco seasoning (low sodium if possible)
  • 1 teaspoon garlic powder
  • 2 teaspoons beef stock concentrate
  • 3 tablespoons tomato paste
  • 1 canned chipotle pepper minced chipotle pepper + adobo sauce (from the can (see note))
  • 0.67 cup sour cream or Greek yogurt
  • 1 cup shredded Mexican cheese blend

Instructions 

  • Cook pasta in salted water, reserve 1 cup of cooking water, then drain.
  • In a large skillet, char poblano and shallots until tender, then add oil and cook beef until browned.
  • Add seasonings, tomato paste, chipotle, and reserved pasta water; stir well. Mix in sour cream and cheese, then heat through.
  • Serve topped with chopped cilantro or scallions.

Notes

You can adjust the spice level by adding more or less chipotle.
