A flavorful and creamy pasta dish with smoky chipotle, tender beef, and roasted poblano peppers, perfect for a quick weeknight dinner.

poblano peppers
poblano peppers, thinly sliced

shallots
shallots, thinly sliced

Seasonings and Condiments

taco seasoning (low sodium if possible)

garlic powder

beef stock concentrate

tomato paste

canned chipotle pepper
minced chipotle pepper + adobo sauce

Instructions
Cook pasta in salted water, reserve 1 cup of cooking water, then drain.
In a large skillet, char poblano and shallots until tender, then add oil and cook beef until browned.
Add seasonings, tomato paste, chipotle, and reserved pasta water; stir well. Mix in sour cream and cheese, then heat through.
Serve topped with chopped cilantro or scallions.
Notes
You can adjust the spice level by adding more or less chipotle.
