A hearty and flavorful dish featuring tender chicken smothered in a creamy sauce served over fluffy rice.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • to taste Whole milk (for sauce)
  • for the creamy sauce Flour (for thickening)
  • to taste Garlic powder
  • to taste Onion powder
  • to taste Smoked paprika
  • to taste Salt
  • to taste Black pepper

Instructions 

  • Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Heat olive oil in a skillet; sear chicken 4-5 mins per side until golden; set aside.
  • Cook rice in boiling chicken broth with salt for 15-18 mins.
  • Melt butter, whisk in flour, then add milk and broth to make sauce; stir in cheeses and seasonings.
  • Return chicken to skillet, spoon sauce over, simmer 10 mins until cooked through.

Notes

Use fresh parsley for garnish if desired.
