Ingredients

olive oil

  • 1 tablespoon olive oil

Italian sausage links (casings removed)

  • 12 oz Italian sausage links (about 3 links)

potato gnocchi

  • 10 oz potato gnocchi

heavy cream

  • 1 cup heavy cream

chicken broth

  • 1/3 cup chicken broth

pumpkin puree

  • 1 cup pumpkin puree

garlic (minced)

  • 3 cloves garlic (minced)

fresh spinach

  • 4 oz fresh spinach

fresh sage (chopped)

  • 2 tablespoons fresh sage (chopped)

fresh thyme

  • 2 tablespoons fresh thyme

salt and black pepper

  • to taste salt and black pepper

Instructions 

  • Heat olive oil in a skillet, cook sausage slices until browned, then drain.
  • Add gnocchi, heavy cream, and chicken broth; boil and simmer for 5 minutes.
  • Stir in pumpkin puree and garlic; add spinach and cook until wilted. Season with herbs, salt, and pepper.
  • Finish with half of sage and thyme; top with remaining herbs before serving.

Notes

Adjust salt based on sausage saltiness for best flavor.
