Ingredients

  • 2 tablespoons extra-virgin olive oil
  • ½ large yellow onion (finely chopped)
  • 4 garlic cloves garlic cloves (minced)
  • 2 teaspoons Italian seasoning
  • ¼ teaspoon crushed red pepper flakes
  • 1 pound ground turkey
  • ½ cup low-sodium vegetable broth
  • cup heavy cream
  • 1 15-ounce can cannellini beans (drained and rinsed)
  • 1 14-ounce can quartered artichoke hearts (drained and roughly chopped)
  • ½ cup basil pesto
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • ¼ cup fresh basil leaves (roughly chopped, plus more for garnish)

Instructions 

  • Heat oil in a skillet, cook onion 2-3 min, then add garlic, Italian seasoning, red pepper flakes; stir 1 min.
  • Add ground turkey, cook 5-6 min until cooked through, breaking it apart.
  • Stir in broth and cream, bring to simmer.
  • Turn off heat, add beans, artichokes, pesto, cheese, lemon juice, basil; stir until cheese melts.
  • Serve garnished with black pepper and basil.

Notes

Feel free to add more basil for extra flavor or adjust seasoning to taste.
