A flavorful and creamy pasta dish featuring tender chicken, sun-dried tomatoes, olives, and fresh basil for a Mediterranean twist.

Ingredients

Pasta

  • 2 cups penne pasta

Chicken

  • 1 pound chicken breast (diced)

Sauces and oils

  • 2 tablespoons olive oil

Garlic

  • 2 cloves garlic (minced)

Vegetables

  • 1 cup cherry tomatoes (halved)
  • 1/2 cup Kalamata olives (pitted and sliced)
  • 1/4 cup sun-dried tomatoes (sliced)

Dairy

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Seasonings

  • to taste Salt and pepper

Garnish

  • as needed Fresh basil for garnish

Instructions 

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  • Add minced garlic, cherry tomatoes, olives, and sun-dried tomatoes to the skillet. Cook for 2-3 minutes until fragrant.
  • Pour in heavy cream and stir in Parmesan cheese. Simmer for 3-4 minutes until sauce thickens. Season with salt and pepper.
  • Combine cooked pasta with the sauce. Garnish with fresh basil before serving.

Notes

For a lighter version, use half-and-half instead of heavy cream.
