A delicious and creamy chicken dish with honey mustard sauce and broccoli, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 16 oz chicken breasts, cut on lengthwise (about 8 oz each)
  • 1 tsp kosher salt
  • 0.25 tsp ground pepper
  • 0.25 tsp garlic powder
  • 1 tbsp olive oil
  • 2/3 cup chicken broth
  • 1 cup milk of choice
  • 1 tbsp gluten free flour
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 0.5 tsp chili flakes (optional or to taste)

Vegetables

  • 1 medium head broccoli
  • 2 tbsp fresh parsley, chopped

Instructions 

  • Heat olive oil in a large pan over medium heat.
  • Season chicken with salt, pepper, and garlic powder, then cook 4-5 minutes per side until golden. Set aside.
  • Whisk flour into milk until smooth. Add broth to pan, simmer, then stir in milk mixture, mustard, honey, and chili flakes. Whisk until smooth.
  • Add chicken and broccoli, cook 8-10 minutes until cooked through and tender.

Notes

For extra flavor, garnish with additional parsley before serving.
