Ingredients

Protein

  • 14 oz cooked and shredded chicken (rotisserie, poached, or leftover grilled chicken)

Dressing

  • 1.5 tsp Dijon mustard (or whole grain mustard)
  • 2 oz plain yogurt (unsweetened or Greek yogurt)
  • 4 oz mayonnaise (preferably Hellmann's or low-fat mayo)
  • 0.5 tsp dried dill (fresh dill or parsley can be used)

Cheese & Vegetables

  • 1.5 oz Parmesan cheese (or nutritional yeast for dairy-free)
  • 2 green onions green onions (thinly sliced)
  • 0.5 carrot carrot (grated)
  • 1.5 oz spinach (roughly chopped)
  • 1 oz tomatoes (diced or cherry tomatoes)
  • 1 celery stalk celery (finely diced stalk)
  • 6 tortillas flour or whole wheat tortillas (or gluten-free tortillas)
  • 0.5 lemon lemon zest and juice (from 1/2 lemon or lime)
  • 1 pinch black pepper (a pinch)

Instructions 

  • Mix shredded chicken with yogurt, mayonnaise, Dijon mustard, dill, lemon zest, and juice.
  • Stir in Parmesan cheese, green onions, grated carrot, spinach, tomatoes, and diced celery.
  • Season with black pepper and adjust flavors as needed.
  • Divide the mixture evenly among tortillas and roll up to form wraps.
  • Serve immediately or chill for later enjoyment.

Notes
