Ingredients

  • 4 pieces boneless chicken breasts
  • 1 stalk celery (cut into 1/4-inch dice)
  • 4 green onions green onions (trimmed and thinly sliced)
  • 2 tablespoons Italian parsley (finely chopped)
  • 1.5 teaspoons fresh tarragon (finely chopped)
  • 1 cup mayonnaise
  • 2 teaspoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon kosher salt
  • to taste Freshly ground black pepper

Instructions 

  • Preheat oven to 350°F (175°C). Bake chicken for 30-35 minutes, then cool and shred.
  • Combine shredded chicken, diced celery, sliced green onions, parsley, and tarragon in a large bowl.
  • Whisk together mayonnaise, lemon juice, Dijon mustard, salt, and pepper in a small bowl.
  • Pour dressing over the chicken mixture and stir gently to coat. Refrigerate until ready to serve.

Notes

For extra flavor, add a squeeze of lemon just before serving.
