Instructions
Heat 1 tablespoon of olive oil in a pan over medium-high heat. Cook chicken until golden, about 5 minutes per side, then set aside.
Add remaining oil, cook mushrooms until golden, then add garlic and sauté until fragrant.
Whisk cornstarch with water, add chicken broth and cornstarch mixture to the pan, then season with salt and pepper. Cook until bubbling.
Stir in cream cheese until smooth, return chicken to the pan, spoon sauce over, and cook briefly.
Garnish with parsley and serve warm.

For a richer flavor, use fresh herbs and high-quality cream cheese.
