Ingredients

  • 2 tablespoons olive oil (divided)
  • avocado oil
  • 1.5 pounds chicken breasts (boneless and skinless)
  • 3 cloves garlic (crushed)
  • 8 ounces button mushrooms (halved)
  • 1 1/4 cup chicken broth
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces Light cream cheese (softened)
  • 1 tablespoon fresh chopped curly parsley

Instructions 

  • Heat 1 tablespoon of olive oil in a pan over medium-high heat. Cook chicken until golden, about 5 minutes per side, then set aside.
  • Add remaining oil, cook mushrooms until golden, then add garlic and sauté until fragrant.
  • Whisk cornstarch with water, add chicken broth and cornstarch mixture to the pan, then season with salt and pepper. Cook until bubbling.
  • Stir in cream cheese until smooth, return chicken to the pan, spoon sauce over, and cook briefly.
  • Garnish with parsley and serve warm.

Notes

For a richer flavor, use fresh herbs and high-quality cream cheese.
