A comforting and creamy vegetable soup perfect for a cozy meal, packed with fresh flavors and easy to prepare.

Ingredients

Vegetables

  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 medium onion, diced
  • 2 cups Yukon Gold potatoes, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or coconut milk
  • 3 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tbsp fresh parsley (or 1 tbsp dried)

Instructions 

  • Wash and chop vegetables into small pieces.
  • Sauté onions and garlic in olive oil until soft, about 2 minutes.
  • Add carrots, celery, and potatoes; cook for 5 minutes.
  • Pour in broth, bring to a boil, then simmer for 20 minutes until tender.
  • Blend soup until smooth, then stir in cream, thyme, and parsley. Warm through.

Notes

For a vegan version, use coconut milk and vegetable broth.
