A comforting and creamy vegetable soup perfect for a cozy meal, packed with fresh flavors and easy to prepare.
Ingredients
Vegetables

carrots, chopped

celery, chopped

onion, diced

Yukon Gold potatoes, diced

low-sodium vegetable broth

cup
heavy cream or coconut milk

cloves
garlic, minced

fresh thyme (or 1 tsp dried)

fresh parsley (or 1 tbsp dried)
Instructions
Wash and chop vegetables into small pieces.
Sauté onions and garlic in olive oil until soft, about 2 minutes.
Add carrots, celery, and potatoes; cook for 5 minutes.
Pour in broth, bring to a boil, then simmer for 20 minutes until tender.
Blend soup until smooth, then stir in cream, thyme, and parsley. Warm through.
Notes
For a vegan version, use coconut milk and vegetable broth.
