A rich and creamy mushroom soup perfect for cozy days, combining a variety of mushrooms with aromatic herbs and a velvety finish.
Ingredients
Olive oil

crimini mushrooms, sliced

pound
shiitake mushrooms, sliced
to taste
Salt
to taste
Black pepper

unsalted butter

onion, finely diced

cloves
garlic, pressed through garlic press

tablespoon
fresh thyme leaves, divided use

teaspoon
Italian seasoning

white pepper

dry sherry

all-purpose flour (about 10 tablespoons)

warm chicken broth/stock

heavy cream

soy sauce
Instructions
Heat 3 tbsp olive oil in a large pot; sauté 2/3 of the mushrooms until browned, then remove and set aside.
Add remaining olive oil and butter; sauté diced onion and remaining mushrooms until softened and browned.
Add garlic, thyme, Italian seasoning, and white pepper; pour in sherry and simmer until reduced.
Stir in flour, cook briefly, then whisk in chicken broth; simmer until thickened.
Puree the soup until smooth, then stir in heavy cream, reserved mushrooms, thyme, and soy sauce.
Ladle into bowls, garnish with thyme, and serve.
Notes
For extra flavor, sauté leftover mushrooms and add as garnish.
