These colorful mini peppers are filled with a creamy cheese mixture, perfect for a quick appetizer or snack.

Ingredients

Mini Peppers

  • 1 lb mini sweet peppers
  • 8 oz cream cheese softened
  • 3/4 cup cheddar cheese grated
  • 2 tablespoons chives chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions 

  • Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
  • Mix cream cheese, cheddar, chives, salt, and pepper until smooth.
  • Slice peppers lengthwise, remove seeds, and fill with cheese mixture.
  • Arrange peppers on baking sheets and bake for 15 minutes.
  • Serve warm, garnished with extra chives if desired.

Notes

For a milder flavor, use less black pepper or omit it entirely.
