These homemade granola bars combine the tartness of cranberries with the bright flavor of orange zest, all held together by a sweet honey and nut mixture. Perfect for a portable snack or breakfast on the go.

Ingredients

Nuts and dried fruit

  • 1 cup pecan pieces
  • 1/2 cup pepitas
  • 2/3 cup dried cranberries
  • 1 3/4 cups quick-cooking oats (or old-fashioned oats, pulsed in a food processor)
  • 1 teaspoon orange zest (from 1 large orange)
  • 1/2 teaspoon ground cinnamon
  • 1/2 to 3/4 teaspoon salt (decrease if your nut butter is salted)
  • 1 cup creamy unsalted almond or peanut butter (packed)
  • 1/2 cup honey or maple syrup
  • 1 1/2 teaspoons vanilla extract

Instructions 

  • Line a 9-inch square baking pan with parchment paper.
  • Toast pecans and pepitas in a skillet for 5 minutes, then pulse with cranberries in a food processor.
  • Mix the nut and cranberry mixture with oats, orange zest, cinnamon, and salt.
  • Whisk together almond butter, honey, and vanilla, then combine with dry ingredients.
  • Press the mixture into the prepared pan, then refrigerate for at least 1 hour.
  • Slice into bars and wrap individually for portability. Store in the freezer for best freshness.

Notes

Press the mixture firmly into the pan for even bars and refrigerate to set.
