Ingredients
Grains
2cupscooked wild rice(see Recipe Notes)
2cupscooked quinoa(see Recipe Notes)
Protein
1-2cupsshredded Rotisserie or poached chicken(see Recipe Notes)
Vegetables & Fruits
1largesweet potato(diced into ½-inch cubes)
1largeapple(diced into ½-inch cubes)
1smallred onion(finely diced)
Greens & Nuts
1bunchkale(destemmed and finely chopped)
½cupchopped walnuts or pecans
½cupshredded smoked gouda or sharp white cheddar
Dressing & Herbs
½cupextra virgin olive oil
¼cupgood aged balsamic vinegar
1.5tablespoonspure maple syrup
1clovegarlic
½teaspoonground cinnamon(heaping)
½teaspoonkosher salt
½teaspoonground black pepper
½teaspoonfinely chopped fresh rosemary(heaping)
½teaspoonfinely chopped fresh thyme(heaping)
Instructions
Preheat oven to 425°F (220°C). Roast diced sweet potatoes with oil and spices for 20-25 minutes until tender and crispy.
Blend olive oil, balsamic, maple syrup, garlic, cinnamon, salt, pepper, and herbs until emulsified to make the vinaigrette. Chill in refrigerator.
Prepare remaining ingredients: shred chicken, chop kale, dice onion and apple, shred cheese, and chop nuts.
Massage vinaigrette into kale, then combine all ingredients in a bowl. Toss with additional vinaigrette to serve.
Serve warm, room temperature, or cold. Enjoy!
