Instructions
Blend the cottage cheese until smooth and set aside.
Sauté poblano, onion, and salt in oil until soft and golden, about 5-10 minutes.
Add diced tomato and cook for 4-5 minutes until softened.
Mix spices with sautéed veggies; set aside 2 tbsp for garnish.
Combine blended cottage cheese with shredded pepper jack, then stir into the skillet off heat until melted.
Pour the mixture into a blender with milk and blend until velvety smooth.
Notes
For a creamier queso, blend with additional milk as needed.
