Delicious and healthy carrot cake bars made with cottage cheese and nuts, perfect for a quick snack or dessert.
Ingredients

cottage cheese

almond flour (or oat flour)

grated carrot

maple syrup or honey (optional)

vanilla extract

Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment or grease.
Whisk cottage cheese, eggs, maple syrup (if using), and vanilla until smooth.
Add almond flour, baking powder, cinnamon, salt, and grated carrot; stir until combined. Fold in nuts if desired.
Pour batter into the dish and smooth the top. Bake for 25–30 minutes until set and a toothpick comes out clean.
Cool for 10 minutes before slicing into 9 bars.
Notes
For extra crunch, add more nuts or a drizzle of honey on top.
