Delicious and healthy carrot cake bars made with cottage cheese and nuts, perfect for a quick snack or dessert.

Ingredients

Dairy & Eggs

  • 1 cup cottage cheese
  • 2 large eggs

Dry Ingredients

  • ½ cup almond flour (or oat flour)
  • ½ cup grated carrot
  • 2–3 tbsp maple syrup or honey (optional)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • Pinch salt

Optional Nuts

  • 2–3 tbsp chopped walnuts or pecans

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment or grease.
  • Whisk cottage cheese, eggs, maple syrup (if using), and vanilla until smooth.
  • Add almond flour, baking powder, cinnamon, salt, and grated carrot; stir until combined. Fold in nuts if desired.
  • Pour batter into the dish and smooth the top. Bake for 25–30 minutes until set and a toothpick comes out clean.
  • Cool for 10 minutes before slicing into 9 bars.

Notes

For extra crunch, add more nuts or a drizzle of honey on top.
