Ingredients

Wet ingredients

  • 1 cup mashed banana
  • 4 large eggs
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil (or melted coconut oil)
  • 1 tablespoon apple cider vinegar

Dry ingredients

  • 1/2 cup coconut flour
  • 1/4 cup arrowroot starch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped pecans (plus more for topping)

Instructions 

  • Preheat oven to 350ºF and prepare muffin tins.
  • Mix banana, eggs, syrup, oil, and vinegar until smooth.
  • Add dry ingredients, stir into batter, rest for 5 minutes, then fold in pecans.
  • Fill muffin cups, top with pecans, and bake for 23-25 minutes.
  • Cool briefly, then enjoy or reheat as desired.

Notes

Using ripe bananas enhances flavor and moisture.
