These delicious and healthy coconut date balls are easy to make and perfect for a quick snack or dessert.

Ingredients

  • 1 cup Medjool dates - Pitted
  • 1 cup almonds
  • 2 tablespoons warm water
  • ΒΌ cup shredded unsweetened coconut

Instructions 

  • Add dates, almonds, and warm water to a food processor and pulse until a moist, rollable dough forms.
  • Scoop about one tablespoon of mixture, roll into balls, and repeat with remaining mixture.
  • Roll each ball into shredded coconut to coat.
  • Enjoy immediately or store in an airtight container in the fridge for up to 2 weeks.
