Enjoy a creamy, tropical breakfast with these easy overnight oats flavored with coconut and bananas.

Ingredients

Dried ingredients

  • 1 cup rolled oats
  • 1 cup coconut milk
  • 1/2 cup Greek yogurt
  • 1/4 cup shredded unsweetened coconut
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup sliced bananas (optional) (optional)
  • Fresh whipped cream (optional) (optional)
  • Additional shredded coconut (optional) (optional)

Instructions 

  • Mix oats, coconut milk, yogurt, shredded coconut, syrup, vanilla, cinnamon, and salt in a bowl.
  • Gently fold in sliced bananas if using.
  • Divide mixture into jars, seal, and refrigerate overnight.
  • Stir before serving and top with whipped cream and shredded coconut if desired.

Notes

For extra flavor, sprinkle additional shredded coconut on top before serving.
