Delicious no-bake coconut caramel bars that are paleo and vegan-friendly, perfect for a healthy treat.
Ingredients
Base

unsweetened shredded coconut

maple syrup

coconut cream
Caramel Filling
1 cup
Medjool dates, pitted
(about 14 dates)

Chocolate Coating

dark chocolate chips
Instructions
Line a loaf pan with parchment paper and set aside.
Mix coconut cream, maple syrup, and vanilla; then stir in shredded coconut. Press into the pan.
Soak dates in hot water 5 minutes, drain, then blend with coconut oil, vanilla, and salt until sticky.
Spread caramel over the base and freeze for at least 4 hours until firm.
Melt chocolate with coconut oil, dip bars, and set on parchment. Optional: drizzle remaining chocolate and sprinkle sea salt.
Notes
Ensure the bars are fully frozen before dipping in chocolate for best results.
