Delicious no-bake coconut caramel bars that are paleo and vegan-friendly, perfect for a healthy treat.

Ingredients

Base

  • 1 1/2 cups unsweetened shredded coconut
  • 2 Tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 cup coconut cream

Caramel Filling

  • 1 cup Medjool dates, pitted (about 14 dates)
  • 2 Tbsp coconut oil
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt

Chocolate Coating

  • 1 cup dark chocolate chips

Instructions 

  • Line a loaf pan with parchment paper and set aside.
  • Mix coconut cream, maple syrup, and vanilla; then stir in shredded coconut. Press into the pan.
  • Soak dates in hot water 5 minutes, drain, then blend with coconut oil, vanilla, and salt until sticky.
  • Spread caramel over the base and freeze for at least 4 hours until firm.
  • Melt chocolate with coconut oil, dip bars, and set on parchment. Optional: drizzle remaining chocolate and sprinkle sea salt.

Notes

Ensure the bars are fully frozen before dipping in chocolate for best results.
