Ingredients

Crust

  • 1.5 cups almond flour or whole wheat flour
  • 2 tablespoons honey or maple syrup
  • 3 tablespoons melted coconut oil or butter
  • Pinch salt

Filling

  • 2 eggs eggs
  • 0.25 cup honey or maple syrup
  • 0.25 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon almond flour or whole wheat flour
  • Pinch salt

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper.
  • Mix almond flour, honey, melted coconut oil, and salt; press into the pan.
  • Bake crust for 10-12 minutes until lightly golden.
  • Whisk eggs, honey, lemon juice, lemon zest, flour, and salt; pour over crust.
  • Bake for 20-25 minutes until set; cool before slicing.

Notes

Use fresh lemon juice for the best flavor.
