A refreshing and easy-to-make shrimp salad perfect for a light lunch or appetizer.

Ingredients

Main

  • 1 pound extra small cooked shrimp (cooled)
  • 0.5 cup finely diced celery (about 2 celery ribs)
  • 0.25 cup finely diced red onion (about 1/4 large red onion)
  • 0.5 cup mayonnaise
  • 1 clove garlic (grated)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest (freshly zested)
  • 1 tablespoon minced fresh dill
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon black pepper

Instructions 

  • Combine shrimp, celery, and red onion in a bowl.
  • Whisk mayonnaise, garlic, lemon juice, lemon zest, dill, parsley, mustard, salt, and pepper.
  • Mix the mayonnaise dressing with the shrimp mixture.
  • Chill for 1 hour before serving.
  • Serve cold, refrigerate leftovers for up to 4 days.

Notes

Use fresh herbs for the best flavor.
