A simple and delicious one-pan meal featuring tender chicken and colorful vegetables roasted to perfection.

Ingredients

olive oil

  • 5 tbsp olive oil

potatoes

  • 1 lb potatoes

chicken breast

  • 1 lb chicken breast

bell pepper

  • 1 piece bell pepper

broccoli

  • 1 head broccoli

cherry tomatoes

  • 1/2 pint cherry tomatoes

salt

  • 2 tsp salt

basil

  • 1.5 tsp basil

garlic powder

  • 1 tsp garlic powder

onion powder

  • 1/2 tsp onion powder

black pepper

  • 1/4 tsp black pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Chop potatoes, bell pepper, and broccoli into bite-sized pieces.
  • Toss vegetables and chicken with olive oil, salt, basil, garlic powder, onion powder, and black pepper.
  • Spread everything evenly on a sheet pan and roast for 30 minutes until cooked through.
  • Remove from oven, add cherry tomatoes, and serve hot.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
