Instructions
Heat olive oil and sauté onions for 2-3 minutes. Add carrots, celery, and tomato paste; cook for 2-3 minutes.
Add garlic, spices, and bay leaves; cook for 1 minute to toast spices.
Add lentils, tomatoes, broth, and water; bring to a boil, then simmer for 20-30 minutes until lentils are tender. Adjust water if needed.
Remove bay leaves, stir in lemon juice, season with salt and pepper, then serve topped with parsley.
Notes
This soup keeps well in the refrigerator for up to 5 days or frozen for 2 months. Perfect for meal prep!
